Putting the other benifits of humidity and heat aside the following is MHO

The way Ive been taught is that the cells of a plant are like bricks!!

When a plant moves and bends the bricks that are on the side of the plant that is compressed are squished. In order for the plant to repair this it rebuilds fresh cells around the damaged ones. Creating a thicker and wider area of cells (Like if a brick in a wall breaks you squish several of the same size in the hole to replace it) this is what you see when a branch is folded or creased the area usually swells after a few weeks in a bulb style.

The cells then are using the resources from the plant in which are usually used to grow upwards so yeh the internodal growth will be reduced.

This is a process that happens in large and small scale bending and creasing stem has the same effect on a cellular level just creasing has a hell of a lot more cells to be patched in the one spot.

Fans provide your plants with constant movement that they adjust to over time knowing that they must repair the effects and grow at the same time. Since this effect is constant the plants thicker stems also provide benefits in the amount that is feed to the plant and as such should cancel out the effect of the repairs on the plants growth rate in latter stages.

I know thats a bit 2 deep for what yous are talking about but hey I like to look at this level as it is the heart and soul of our babies growth.
