Rhubarb Canna Crumble.

This is one of my favourite getin-ripped recipes.

3 cups Rhubarb - sliced 1cm thick.

1 cup Apples - peeled, cubed.

1/2 cup Strawberries - sliced

1/3 cup Sugar - granulated

1/2 ts Cinnamon - ground

 

1/2 cup Flour - plain

1 ts Baking powder

1/4 ts Salt

6 tb Canna butter

2/3 cup Brown sugar

2/3 cup Quick cooking Oats

Combine rhubarb, apples and strawberries; spoon into a (lightly) greased 8 inch square baking dish. Combine sugar and cinnamon; sprinkle over rhubarb mixture, and set aside. In a large bowl, combine flour, baking powder, and salt. Use clean hands to cut in butter until mixture looks like coarse breadcrumbs. Stir in brown sugar and oats. Sprinkle over rhubarb mixture.( I also pop some sultanas on top so they stick out of the "breadcrumbs", once cooked the sultanas become crunchy).

Bake at 190 degrees for 40-50 mins or until lightly browned. Serve with Vanilla Ice cream.
