Earwgs will do that, but mainly at night, i have that problem at that stage, so i  cover at night with a empty tin , pushed lightly into the soil

Also looks as though there a bit stalky, ........when u transplant , burry the stem a little, & only water from the side for a while, to avoid stem rot,   good luck with em
