Hi everyone,

 

I thought that I would share my wifes recipe for her Double Choc Canna Muffins, they are super yummy and super strong, real easy to eat too much and be really nailed to the couch... lol

 

Ingredients

 

1 cup of choc buttons

1/2 block of milk cooking chocolate

50g of normal butter

65g of Canna butter

1 cup white sugar

1 egg

3 teaspoons vanilla essence

dash of salt

1 cup milk

2 cups of self raising flour

 

*those who are brave enough can use all Canna butter is desired...*

 

Preparation

 

Preheat oven to 200C

 

In a large saucepan, combine butter and cooking chocolate and heat on low heat until mixture is melted and smooth

 

Remove from heat and let cool (lukewarm)

 

Stir in sugar, egg, vanilla and milk into the chocolate mixture until well combined

 

In a separate bowl, sift flower.

 

Add chocolate mixture and stir well. Add choc buttons and mix in well.

 

Spoon batter into muffin tins. Fill to 1cm from top.

 

Bake for 20 - 25mins

 

Makes 6 extra large muffins or 12 smallish muffins.
