Title :: Butterscotch & Pecan Shortbread

Ingredients ::

  • 4 ounces unsalted butter, or green butter
  • 1/3 cup light brown sugar, packed
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1 1/4 cups plain flour
  • 1/2 cup finely chopped pecans

  • Decorations:
  • 1/2 cup of melted plain or dark chocolate for dipping
  • add some hash to the Choc-dip if you want
  • Few more chopped pecans set aside or icing sugar

Description ::

Another easy shortbread recipe. You can choose to leave the weed out if you like... coz i rekon ur mum would try to knick one!

 

1. In a medium size mixing bowl, beat butter, sugar, and vanilla together.

2. Stir in salt and flour

3. Add pecans

4. Knead in gently with hands, if necessary.

5. Press or gently roll out on a lightly floured surface

6. Cut into circles or squares about 1/2-1cm thick.

7. Bake for 15-20 mins @ 160 deg C, check at about 10-12mins if you cut them thinner

 

Decorations:

 

1. Half dip each piece of shortbread into the melted hash chocolate

2. Sprinkle a few chopped bits of pecan or icing sugar (or both) on the dipped side.

3. Leave in fridge until the chocolate goes solid again
