Potato, Bacon and Leek Soup

Title :: Potato, Bacon and Leek Soup

Ingredients ::

  • 8-10 potatoes
  • 3-4 Tbsp canna butter
  • 6 rashes bacon
  • 1 lrg leek
  • 1l chicken or vegy stock
  • 2 garlic cloves

Description ::

Great soup and with a nice amout of canna butter to give it a good kick

 

 

1. In a big soup pot or pressure cooker put in ya canna butter and all you finely chopped bacon and sliced leek and crushed garlic cloves cook untill leek goes abit soft.

2.Obce ya leek is looking soft then add your stock and if using a soup pot add 2 extra cups of water and start boiling if pressure cooker is used then no need for extra liquid.

3. Give a really good stir whilst scraping the bottom abit to disolve the residue the bacon left on the bottom as this adds top the flavour. Add you potato cut into small pieces put lid on and cook. If using a soup pot boil untill potatoes are very soft.

4. Once all cooked get out a pretty large bowl and food processor and ladel your mixture into the processor and mix untill smooth.

5. Your soup should look like this once smooth now transfer into the bowl to keep your mixture and your soup seperate so that there is no lumps.

6. Once you have processed it all your soup is done just add some pepper and salt to taste and ladel into warm bowls.

 

 

Garnish with some croutons and some fried bacon if you like
