There is a forum here called Harvest & Processing, in the very first subforum of this section Drying and Curing, there is a post with pictures showing you the concepts of when to harvest.

 

The post is pinned, as I got asked this question 6 or so million times by people who couldn't be bothered reading, here it is, linked again.

 

An alternative would be searching for "harvest when", which will give you many many topics to read.

 

Can I politely ask people to read the information already provided several thousand times on this site, it's really not that hard to find, but you do have to read.
