Bacon Hock Soup

Ingredients ::

  • 1 lrg bacon hock
  • 2 onions
  • 1 parsnip
  • 1 turnip
  • 1 leek
  • sweet potato
  • 1 can corn
  • 3 rashers bacon
  • 5 potatoes
  • silverbeet
  • 3 celery stalks
  • 1 packet french onion soup mix
  • 1ltr vegie stock
  • 2 cup soup lentel mix
  • laksa paste "optional"
  • 3-4 g of bubble hash

Description ::

Great soup for those cold days

1. Chop all the onion leek and bacon and add some oil o a big pot or pressure cooker and fry them up.

2. To this add your frech onion soup mix and half your vegie stock.

3. Chop all ya vegies up (excluding ya silverbeat) into smallish pieces and add to your pot

3. Now add your lentil mix and top up with more stock if needed (if your using a pot to cook i would double the stock or just add more water)

4. Add all ya silverbeat to the top and but lid on ya pressure cooker and but on the heat now if using a ordinary pot make sure the water is over all the vegies and push the silverbeat down under the water.

5. Now once boiling in a pot it will take a while just take off once the vegies are soft and the water level has gone down by half in a pressure cooker it will take about 20min once done it will look like this. When it does remove the bacon hock and set aside.

6. Add your can of corn and break up ya ball of hash and ad this as well give a really good stir to make sure the hash gets right through it

7. get ya bacon hock and start pulling off all the meat any left overs ya dog will go ape shit over ;) chop it up into nice size chunks and add that to ya soup add about half a jar of laksa paste if ya like things hot and stir that through (optional)

Now all ya gotta do is ladel into some warm bowls and top with croutons
