yes but you need to keep in mind what you miss from not using barley 

 

i'm not a brewer so my basic understanding is barley has a much higher enzyme count than rye 

 

one enzyme is chitin or chitinase to be accurate which you can also get from crustacean shells = chitin

 

chitinase causes a defense response in plants , a hack if you will , the plant thinks when it detects the enzyme chitinase    

it's about to be attacked so it bolsters all it's defenses ready for the onslaught of attack which never comes 

 

the bonus for the grower is the plant took on all this extra defense power that ultimately gets used in other 

plant processors  

 

you use rye in flower , absolutely , but not as a total replacement for barley , if using weekly malted grains 

use rye every second week would be the suggestion
