butternut pumpkins are generally used in the sweet side of cooking like pumpkin pie , mainly cos they don't hold there shape & fall apart once cut up & cooked

don't know anything about curing them but you can ferment them with other things like tomatoes for a bloom fertilizer for the garden , check out http://theunconventionalfarmer.com/recipes/bloom-fertilizer/
