Simple no cook fudge.

Ingredients: 1 cup peanut butter smooth or crunchy.

                    1/4 cup canna coconut oil

                    2 tablespoons honey

                    1/4 cup sea salt

                    1/4 cup icing sugar

                    1/2 teaspoon vanilla.

 

Combine all ingredients in a mixing bowl. The optional icing sugar should be used if you plan to take out of the freezer for more than 5 minutes before eating. This will help bind the fudge and prevent it from softening up too quickly.

 

Pour mixture into a lightly oiled 5"x 7" pan 12 x 18 cm.

Cover and freeze until set about 1 hour.

Cut into squares 2 x 2 cm and store in airtight container in freezer.

 

This fudge should be kept in freezer until ready to eat as it will soften up quickly. It is very hard not to want to keep eating it! I used the icing sugar whether I needed it or not. I also added some shredded coconut just for a bit of texture as I only had smooth pea nut butter.

Things are great thanks Faith. Not much going on here, waiting on harvest month. Still playing tennis. Planning another trip to China when my mate and his wife and new born daughter return there from Melbourne in April. Heart is going good still. Nice to be waking up everyday. Trying to get my shit together so I may be able to get to MG this year.
