I don't see a problem growing like that jester, outside in the ground most people will be surprised with just how shallow and wide majority of veggies etc roots actually grow.

 

That shape of pot will effect how much water is held, also the larger surface area will lead to more water evaporation, but jsut gotta keep on top of watering.
