Not my recipie I ripped this one outa a book

 

you will need a candy or jam making thermometer to get this right

you will also need some gloves on when near the caramels as it will melt your skin off and it hurts like a bitch , trust me

 

Ingredients,...... all these are weight out by the gram

 

Water 200g

Sugar 500g

Vanilla bean 1 bean

Sweetened condensed milk 360g

Glucose syrup/Light corn syrup 430g

Canna butter 200g

Salt 1 tsp

 

Step 1 .. Combine water , sugar , scrapped vanilla bean and sweetened condensed milk in saucepan

Step 2 .. Bring to boil on highest heat setting ...when brought to boil add the light corn syrup then put on medium heat and continue cooking while stirring constantly

Step 3 .. when mixture reaches 110 degrees C or 230 degrees F add the butter and continue cooking while stirring

Step 4 .. when mixture reaches 117 degrees C or 243 degrees F add the salt and remove from heat

Step 5 .. Pour out onto a tray with baking paper on it for easy handling later and allow to cool at room temp

Step 6 .. When half cooled down cut your caramels into portions with an oiled knife , this will make it easier to separate later

Step 7 .. Eat some when they cool down

 

Storage .. When completely cool separate and place in an air tight container and put in fridge .....
