Soluble nutrients are still different. If you don't adjust the pH of the water you'll find that some nutes could be precipitated. Once this reaction occurs, it's very hard to reverse it, particularly with some micronutes like iron.

 

pH can be adjusted in soil before growing, or during, but it takes time. The best way to ensure nutrients are available is to test the pH of the mix in question before planting, then if it needs adjusting with either lime or sulphur (use dolomite lime btw, source of magnesium) you can do so by putting the mix on a tarpaulin or clean concrete surface, using the sulphur or lime as directed and turning and mixing well.

 

Most potting mixes can benefit from the addition of some perlite, this helps to lighten the mix.
