sols Posted December 31, 2002 Report Share Posted December 31, 2002 g'day; this is nice cake...... 4oz butter or dope butter. 1 cup castor sugar. 3/4 cup mashed potato. 2 eggs. 1/2 cup plain flour or dope flour ( powdered buds ). 1/2 cup self- raising flour. 1 teaspoon nutmeg. 2 teaspoons grated lemon rind. 4 oz chopped walnuts. 4oz dates. 1/4 cup milk. chop dates, place in saucepan with milk, bring to boil. remove from heat and allow to cool. cream butter, sugar and lemon rind until light and fluffy.add eggs one at a time, beating well after each addition. gradually add cold mashed potato, beat well. fold in sifted flours and nutmeg. fold in chopped walnuts, cold dates-and-milk mixture. place mixture in greased deep 8 inch round cake tin which has the base lined with greased grease-proof paper. bake at 375-400F, for 45-50 minutes. cool in tin before turning out. note: the addition of potato to this cake makes it beautifully moist. Guest Urbanhog Posted January 30, 2003 Report Share Posted January 30, 2003 its not uncommon to see some cakes use Mashed Potatoes, because often mashies are good for keeping the ingredents together with aid of the eggs which the eggs are a excellent blinding property (I mean keeping all the shit together without falling apart) and also the mashies gives the cake bit more of "body" and a great "filler" tool gives the cake bit of a filling not end up too "light" like these cheap cakes and they can "stretch" the cake receipe to make go further when there isnt much flour or shit like that......
